Appellation: DOC Colli Maceratesi Ribona
Altitudes and Aspects: North -East; North-West. From 200 to 280 meters above sea level
Soi: Deep, medium-textured, mainly clay, located on a hill
Vineyard: Sustainable management through natural methods of defense and organic fertilization, legume green manure and mechanical weeding
Training method: Single guyot
Grapes: Ribona 100%
Harvesting: Hand harvesting in the first half of September. Use of small crates, selection of the bunches directly in the vineyard
Winemaking: Soft pressing of the grapes in a reductive environment. Must filtering by flotation. Alcoholic fermentation under controlled temperature in steel by means of selected yeast. In steel for 6-8 months, second fermentation in the bottle
Aging: At least 24 months in the bottle. Manual remuage
Serving temperature: 12°C
