Appellation: Colli Maceratesi DOC Ribona
Altitudes and Aspects: South East; South West. From 200 to 280 meters above sea level
Soil: Deep, medium-textured, mainly clay, located on a hill
Vineyard: Sustainable management through natural methods of defense and organic fertilization, legume green manure and mechanical weeding
Training method: Single guyot
Grapes: Ribona 100%
Harvesting: Hand harvesting according to grape maturation and ripening between the second part of September and the first of October. Use of small crates, selection of the bunches directly in the vineyard
Winemaking: Soft pressing of the whole bunches in a reductive environment. Must filtering by flotation. Earlier harvest grapes are fermented under controlled temperature in steel by using selected yeast while later harvest must ferments in barrique with natural yeast strains
Aging: 8-9 months in steel tanks and in wood on lees before aging in bottles for other 6 months
Serving temperature: 14°C
